{"id":110699,"date":"2020-07-01T10:09:12","date_gmt":"2020-07-01T14:09:12","guid":{"rendered":"https:\/\/www.ucf.edu\/news\/?p=110699"},"modified":"2020-09-30T14:54:32","modified_gmt":"2020-09-30T18:54:32","slug":"ucf-is-developing-new-nanotech-to-detect-food-fraud","status":"publish","type":"post","link":"https:\/\/www.ucf.edu\/news\/ucf-is-developing-new-nanotech-to-detect-food-fraud\/","title":{"rendered":"UCF is Developing New Nanotech to Detect Food Fraud"},"content":{"rendered":"<p>A <a href=\"https:\/\/www.ucf.edu\/research\/\">University of Central Florida researcher<\/a> is developing new technology to make sure people are getting the food they think they\u2019re eating.<\/p>\n<p>The work is funded by a recent $490,000 U.S. Department of Agriculture National Institute of Food and Agriculture, Agriculture and Food Research Initiative grant to create an easy-to-use and highly sensitive device to detect food fraud, such as the substitution of pork in beef products.<\/p>\n<p>Adulterated food results in people paying more for their food than it\u2019s worth, as sometimes foods are bulked up with less expensive filler products. They will create a new metallic coating, made of platinum, palladium or iridium, that will go around the gold nanoparticles to increase their sensitivity.<\/p>\n<p>Preliminary results showed that using a platinum coating made the tests 100 times more sensitive than current colorimetric lateral flow assays. This makes them closer in effectiveness to the more expensive and complicated, but precise, enzyme-linked immunosorbent assays.<\/p>\n<p>The researchers will now work to increase the sensitivity and reliability of their test, including by using different metals for the coating. For this project, they are specifically looking for the presence of meat and blood in foods, such as pork protein in a sample of beef.<\/p>\n<p>The work build\u2019s on Xia\u2019s research into biosensing, including recent work to create a <a href=\"https:\/\/www.ucf.edu\/news\/ucf-technique-may-help-detect-cancer-earlier\/\">biosensor for early cancer detection<\/a>.<\/p>\n<p>Xia will collaborate with Qinchun Rao, an assistant professor in Florida State University\u2019s Department of Nutrition, Food and Exercise Sciences. Xia\u2019s lab will be building the test strip, while Rao\u2019s lab will be testing its effectiveness in detecting adulterated meat. The project is scheduled for completion in 2023.<\/p>\n<p>Xia joined UCF\u2019s Department of Chemistry, part of UCF\u2019s <a href=\"https:\/\/www.ucf.edu\/college\/sciences\/\">College of Sciences<\/a>, in 2018. He has a joint appointment in UCF\u2019s <a href=\"https:\/\/www.nanoscience.ucf.edu\/\">NanoScience Technology Center<\/a>. Prior to his appointment at UCF, he worked at Michigan Technological University as an assistant professor and at Georgia Institute of Technology as a postdoctoral researcher.
