The initiative is co-directed by\u202f<strong>Phil Metzger<\/strong><strong> \u201900MS \u201905PhD<\/strong>, planetary scientist and director of UCF\u2019s participation in the program, and <strong>Amy Gregory<\/strong><strong> \u201911PhD<\/strong>, associate professor and Faculty Fellow for Space Tourism at the\u202f<a href=\"https:\/\/www.ucf.edu\/college\/rosen-college-hospitality-management\/\">Rosen College of Hospitality Management<\/a>.<\/p>\n<p>\u201cWe\u2019ve been encouraging students to think beyond science and engineering,\u201d Metzger says. \u201cWorking with Rosen College helps make this a true UCF collaboration \u2014 one that shows space can connect to every discipline.\u201d<\/p>\n<p>Each campus brings a unique perspective to the challenge. On the main campus, students are developing experiments ranging from \u201cspace laundry\u201d \u2014 testing whether clothes can be cleaned in zero gravity \u2014 to studying crystal and yeast growth in microgravity. At Rosen College, students are exploring how\u202ffood and beverage preparation can adapt to long-duration space travel, experimenting with tofu coagulation, texture and preservation techniques to help define what future astronauts \u2014 and eventually space tourists \u2014 might eat in orbit.<\/p>\n<p>\u201cUp to this point, <a href=\"https:\/\/www.ucf.edu\/space\/\">space research<\/a> has focused on getting there,\u201d Gregory says. \u201cOur students are asking what comes next \u2014 what happens when people live and work in space? Food is at the heart of that conversation because it\u2019s nourishment, medicine and community all in one.\u201d<\/p>\n<p>Rosen\u2019s efforts are also being integrated into the classroom through a new\u202ffood and beverage in space\u202fmodule within the <em>Techniques of Food Preparation<\/em> course led by\u202fChef C\u00e9sar Rivera Cruzado, allowing hospitality students to connect <a href=\"https:\/\/www.ucf.edu\/research\/\">research<\/a> with coursework while learning how their field intersects with science, technology and human experience beyond Earth.<\/p>\n<p>\u201cThis is an area that\u2019s growing fast,\u201d Rivera-Cruzado says. \u201cSpace tourism is coming in less than 10 years \u2014 maybe even five \u2014 and every sector will have an opportunity to contribute. For us, that means learning what food and hospitality look like off the planet.\u201d<\/p>\n<p>Rosen College has also connected with\u202fspace industry figures, including engineers, astronauts and chefs, such as\u202fJos\u00e9 Andr\u00e9s \u2014 as well as\u202frepresentatives from\u202fBlue Origin\u202fand\u202fAxiom Space \u2014 to explore future opportunities in\u202f<a href=\"https:\/\/www.ucf.edu\/space\/space-food-and-tourism\/\">space hospitality and culinary equipment development<\/a>.<\/p>\n<p>Together, these initiatives highlight how <a href=\"https:\/\/www.ucf.edu\/partnerships\/\">UCF\u2019s collaborative spirit<\/a> continues to propel discovery \u2014 preparing students to help define what hospitality, comfort and daily life
