Biography

Dr. Amy Gregory is an Associate Professor at the University of Central Florida’s Rosen College of Hospitality Management, where she teaches lodging courses at the undergraduate, graduate, and doctoral levels. She has authored textbooks, book chapters, case studies, and encyclopedia entries, and her research is widely published in top hospitality management journals. She also contributes regularly to industry trade publications. Her primary research focuses on consumer and employee behavior in the lodging industry, with special interests in long-stay leisure lodging and related areas such as sports, recreation, and relaxation.

In addition to her hospitality expertise, Dr. Gregory is helping shape the emerging field of space tourism and space hospitality. As a faculty fellow for space tourism at Rosen College and co-director of UCF’s participation in the Student Spaceflight Experiments Program (Mission 21), she collaborates with students and interdisciplinary teams to explore how the hospitality industry will evolve as commercial space travel becomes more accessible. Her work examines what guest experience, service design, and food-and-beverage considerations may look like beyond Earth—preparing the next generation of hospitality leaders for a future that includes orbital hotels and space destinations.

Before joining academia, Dr. Gregory spent more than 25 years in the hospitality industry, including 18 years as a timeshare executive. She has hands-on experience in international sales, marketing, asset management, business and product development, and revenue and inventory management. Her career took her across the globe, including long-term assignments in Europe and Asia.
